Cauliflower Casserole

Ingredients
- 1 hd cauliflower, florets, cooked
- 1/4 C butter
- 2 T flour
- 1 1/2 C whole milk, warmed
- bread crumbs
Options
- sour cream
- grated cheese (your choice of type)
- scallion greens
- horseradish
- mushrooms
- spinach
- ham, pepperoni, sausage
Instructions
- Melt the butter and then whisk in the flour to make a roux. Slowly whisk in the milk, then simmer until the sauce thickens. Season to taste, then mix in the options.
- Place the cauliflower in a buttered, shallow baking dish, then pour the sauce over. Sprinkle with bread crumbs.
- Bake at 450 until topping is golden brown.
- Plate and serve.
